How to Grow Savoy Tatsoi Cabbage
Prepare fertile, well-draining soil. Sow seeds in the spring after the last frost to early summer or late summer/early fall. Keep the soil moist and fertilize as needed. Optimum growing temperatures are in the 60s°F. Exposure to frost or prolonged temperatures below 50°F may result in bolting. Mulch fall crops to avoid premature bolting. Harvest young baby leaves for salad mix or harvest the whole plant when fully mature at 10-12" tall.
For microgreens, sow seeds in spring to summer in sandy soil in a bright but cool location. Broadcast seeds on soil and cover with a thin layer. Keep uniformly moist. Harvest by cutting when seedlings reach 3-4". Use in salad, saute, soup and stir-fry. Excellent as baby leaf and microgreen harvests.
Harvesting Pak Choi
This pak choi is fully harvestable in 45 days. Cut the short root stem below the base and lift away the head of the cabbage.
Pak Choi can also be harvested to cut-and-come-again by cutting only the outer leaves 2" from the base. New leaves will grow, and you can continue harvesting 1/3 of the cabbage at a time
Culinary Tips
Use in stir-fries, sauté,soups, or salad. To prepare, rinse well and separate the stems before tearing leaf greens from ribs. Cut into thin slices. If it is tender enough, harvest at 30-35 days to add to a fresh salad for an Asian flair. For stir fry, cut into 1/2" slices and saute with oil, vegetables, and/or the meat of your choice.
