Sowing and Growing

Direct sow in the spring in deeply-tilled, well-drained soil as the roots can get quite long. Germination time is up to 2 weeks. Burdock can grow from 2 to 9 feet tall and is a plant that can become invasive. Consider a location where spread will not affect other plants.


Harvesting

Roots, shoots, and leaves are edible. Harvest the roots in the fall of the first year or spring of the second year and leaves and shoots when very young. During the plant’s second year, the identifiable spiky purple flowers appear. Remove these to prevent self sowing.
