Milk Thistle is a flowering herb related to dandelion and sunflowers that is also known as Silybum milk thistle. It contains a milky sap believed to have healing properties. It is also rich in vitamins A, and C, and high in antioxidants making it a popular dietary supplement. You can add this herb naturally to your salads, smoothies, or steamed. Just be sure to remove the spines before eating. Because it is so easily grown this thistle is considered a weed in many places. This plant and its seeds actually can't be sent to the state of Washington as a precautionary measure. While it is safe for humans to eat, avoid feeding livestock as it is toxic to animals.
