Growing Microgreens Starter Guide
Other Common Names: Microgreen Convolvulus, river spinach, water morning glory, water convolvulus, Chinese spinach, Chinese Watercress, Chinese convolvulus, swamp cabbage, phak bung, ong choy, kongxincai, rau muống, kangkong, trokuon, kalmi saag, kalmi shak, Thooti Koora, kangkung, or hayoyo.
How to Grow Microgreen Kangkong
Prepare a level-growing surface of coco coir or hydroponic soilless medium by lightly patting it down and misting it with water until wet. Sprinkle the Water Spinach seeds densely across the surface. Use a seed shaker or a clean, re-used spice jar with holes to spread them out. Water them in with a mister or spray bottle. Place a second black tray on top to rest on the seeds. Put the tray in a dark location for 2-3 days. After they have all germinated and look plump (around 2 days), make sure the growing medium is still wet.
Water heavily from underneath. Move your seedlings to the sun or under a grow light. Water the tray regularly, but allow the soil some time to dry between waterings. The amount of time between waterings will be different for everyone based on the room temperature and your watering habits. Avoid too much airflow. In general, if growing your seedlings in the sun with a shallow tray, you will have to water them much more frequently than growing them under a grow light in a deep tray. Check the bottom tray daily and refill with 1-2 cups water. They should never be allowed to dry out.
Harvesting Microgreen Kangkong
Water Spinach Microgreens are most frequently harvested with a cut-and-come-again method. Once the sprouts have developed some true leaves, you may begin to harvest the leaves and stems. Keep away from the soil or growing medium to keep the leaves fresh. They are harvested at a variety of maturity levels.The biggest difference is the texture; as they mature, they get slightly more robust in texture.
Culinary Tips
Steamed squid is a very popular dish to make with kangkong. They can be eaten fresh or lightly cooked. They overcook easily, so add them last! Just one cup of Water Spinach contains over 50% of the recommended daily value of Vitamin C based on a 2000-calorie diet.
