Lentils (Pulses) are a vegetable in the legume family. They are able to deposit plant-accessible nitrogen into the soil making this a great crop to include in your rotation. They are also high in protein while being low in fat. In fact, lentils are often favored in vegetarian diets because they are one of the vegetables with the highest protein content that we know of. Lentils prefer cool weather, full sun, and a soil pH from 6-8. You can also grow these in drought-prone areas however, the yields will likely be reduced. Plant with potatoes, cucumbers, and summer savor. Avoid planting with onions or garlic.
